An intern Womple in Austin Texas! Our intern this year was doing a social justice (shout out to Mobile Loaves and Fishes) womple and came across the hipster Palomino Coffee. Sterling Roberts (owner of Flat Track and Palomino) knows cool. Palomino resides in East Austin and unlike its cousin goes for a more refined, perhaps less gritty ethos. Don’t bury the lead as the coffee is tasty and scene worth the visit.
Coffee:
The coffee was excellent and prepared exactly how I like it. The latte was rich, smooth, and full of flavor, making it especially enjoyable. One of the best parts of the experience was being able to watch them grind the coffee beans, which gave the whole visit a fresh and thoughtful feel.
Barista:
The baristas were incredibly welcoming and helpful from the moment I asked about medium-roast coffee beans for a friend. Since I am still new to learning about coffee, I appreciated how kindly they pointed me toward options that were closest to a medium roast and made the process feel much less intimidating. Their patience and knowledge added a personal touch to the visit and made the experience even more enjoyable.
Vibe:
One of the best parts of this coffee lab is its atmosphere. It is not too crowded, which makes it feel calm and easy to enjoy. The space has a desert, earthy, and cowboy-inspired vibe that gives it a lot of character. It is the kind of place where people come to study, have conversations, or simply relax with a drink. The natural light is another standout feature, helping the space feel bright, warm, and welcoming. With a mix of cushioned wooden benches, chairs, and couches, there is a comfortable seating option for just about everyone. Really stands true to their Marfa vision. Very eclectic merch with great branding almost bringing an apothecary vibe.
Make You Better:
When grinding coffee, the noise tends to reverberate which makes it harder to concentrate or have a conversation. Maybe it was just timing, but it was distracting. Also, during our visit, the back area did not have any music playing, which made the space feel a bit quiet. A little background music could make it feel more welcoming and complete.
