Just west of downtown, near the confluence of the Kansas and Missouri rivers, among the funky, historical industrial district of West Bottoms, sits the largest coffee shop I’ve yet visited. Blip Roasters occupies 19,000 square feet and every inch is resonant with the infusion of a cool, gritty, garage vibe, motorcycle culture with a specialty coffee experience.

Coffee:

On my first visit, BLIP offered one drip and one espresso to choose from. Being that BLIP names itself a roaster and that their roasting operation sits in the next room behind the coffee counter, I found this surprising and mildly disappointing. I’d have thought a roaster would want to show off what it is they do with a more varied product offering, but sadly, not this day. For my drip, I had their El Salvador Monte Alto, grown at 1550 meters above sea level, with advertised notes of blueberry, plumb, dark chocolate, and a rich body. I tasted skin of plumb with a mild hint of chocolate. It was agreeable but not as chocolaty as I would prefer. Sadly, my cortado was an exercise in disappointment. They didn’t have any cortado glasses and told me I’d be getting mine in a paper cup, thereby stripping me of the tactile and visual pleasures of a Cortado. I asked if I could have it served in a coffee cup which is what they did, only instead of serving me a 4 oz beverage in an oversized cup, they put in an espresso shot and filled it to the brim with steamed milk, rendering a misfit of a coffee drink with no name, and at least from my part, no in interest. I opened saying that this was first visit because, I know I’ll be back.

Barista:

It’s a laid-back vibe at BLIP, including their barista service. My barista was friendly enough, but I found our interaction to be more transactional than personally engaging. Perhaps I bothered her with my questions about their beans of the day, and perhaps also my coffee cup request, but I’d have thought that sort of banter was mainstream dialog for a coffeeshop. We also ordered burritos which were quite tasty but slow in arriving. I had some pleasant dialog with the other baristas and am of the opinion that friendliness is rather consistently on the menu. Nonetheless, having my barista go rouge on my cortado was contrary to carefully crafted coffee service.

Vibe:

 BLIP rocks with vibe. Racing pin stripes wrap their La Marzocco espresso machine backdropped by a wall of 60 or so vintage motorcycle helmets. With barrel vaulted ceilings, brick walls, and concrete floors reminiscent of a 100-year-old warehouse, BLIP offers an impressive array of motorcycle themed coffee shop merch as well as motorcycle racing gear for sale throughout the store. Vintage motorcycle gas tanks are scattered among T-shirt displays, large pots of succulents, and bags of roasted beans. Seating options include uber worn leather sofas, tables, and bar counter stools, both at the service bar and facing the front windows. The shop includes a conference room, a stage for live music, their roastery area, and plenty of open floor space (they even have plastic motorcycle trikes for tots to tool around on), They offer cupping classes (coffee tastings) every other week.

Make You Better

Offering a broader sampling of their coffee roasts would be a big win in my book. And a more attentive and precise coffee culture would be very much appreciated.

Despite being disappointed with my Cortado, I heartily recommend a visit to BLIP.
